Raw & Living Green Bean Casserole


GREEN BEAN CASSEROLE

Just like Mom's, that's what I was craving.
I improvised this one, so I'm not sure the quantities, but give it a whirl....

I marinated the green beans in some lemon juice, date water (just blend pitted dates well in water), garlic powder and sea salt.

For the sauce I made fresh cashew butter (blend raw cashews in food processor for five minutes or until you achieve a butter-like consistency), then added lemon juice, thyme, garlic powder, chopped white mushrooms, sea salt and pepper.

For the topping I used diced onions in olive oil, dehydrated for 3 -5 hours at 105 degrees.

It was just that easy! Can't wait to make it again.

Raw Boysenberry Cheezecake!

RawKit's CHEEZECAKE is super easy to make and you can create any flavor your heart desires.
What you'll need: food processor, blender, spring foam pan

Start with the crust:
Pour 1 1/2 cups of macadamia nuts into the food processor. Slowly add 1/2 cup pitted dates and mix well. You'll end up with a gooey blob to spread evenly in the cake pan.

Next is the filling:
Blend 3 cups of cashews, 3/4 cup lemon juice (about 5 large lemons), 3/4 pitted dates, 3/4 cup coconut oil, and the seeds of a fresh vanilla bean all in your high-speed blender. You can add water as needed, but no more than 1/2 a cup.

This one's special because I added boysenberry!
I made a little sauce in the blender with about a cup of frozen boysenberries, 3 pitted dates and a dash of water. I poured this in between layers of my cake and it kind of leached into the top layer. Beautiful!
You can add whatever flavors you like! I am definitely doing cacao next time.
